Ingredients
1.5 kg (3.3 lbs) chicken thighs or drumsticks
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
120 ml (1/2 cup) honey
80 ml (1/3 cup) soy sauce
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon cornstarch
2 tablespoons water
500 g (1 lb) baby potatoes (optional)
2 cups broccoli florets (optional)
1 large carrot, sliced (optional)
Instructions
Preheat oven to 200°C (400°F) and prepare a baking dish.
Season chicken with salt, pepper, paprika, and garlic powder.
Mix honey, soy sauce, garlic, ginger, olive oil, and lemon juice.
Combine cornstarch and water, then add to sauce.
Arrange chicken and vegetables in baking dish.
Pour sauce over everything evenly.
Bake for 35–45 minutes, basting halfway through.
Broil for 3–5 minutes until caramelized.
Rest for 5 minutes before serving.

Marinate chicken for extra flavor if time allows
