For the Dough:

  • 2 ½ cups all-purpose flour

  • 2 ripe bananas, mashed

  • 1 large egg

  • 1/2 tsp salt

For the Cinnamon Swirl:

  • 1/2 cup brown sugar, packed

  • 2 tsp ground cinnamon

For the Glaze:

  • 1 cup powdered sugar

  • 2–3 tbsp milk

  • 1/2 tsp vanilla extract


Instructions

  • In a small bowl, combine warm milk, yeast, and a pinch of sugar. Let sit for 5–10 minutes until foamy.

  • In a large bowl, mix mashed bananas, melted butter, egg, and remaining sugar until smooth. Add the yeast mixture and salt. Gradually stir in flour until a soft dough forms.

  • Knead the dough on a floured surface for 6–8 minutes until smooth and elastic. Add flour as needed.

  • Place dough in a greased bowl, cover, and let rise 1–1.5 hours until doubled in size.

  • Mix brown sugar and cinnamon in a small bowl.

  • Roll dough into a 12×18-inch rectangle. Spread butter over dough, then sprinkle cinnamon-sugar mixture evenly.

  • Roll the dough into a log and pinch the seam. Slice into 12 rolls.

  • Place rolls in a greased 9×13-inch dish, cover, and let rise 30–40 minutes until puffy.

  • Preheat oven to 350°F. Bake rolls 25–30 minutes until golden.

  • Mix powdered sugar, milk, and vanilla for the glaze. Drizzle over slightly cooled rolls. Serve warm.
