  • 2 cups whole milk

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ¼ teaspoon ground nutmeg

  • 1 cup grated Gruyère cheese

  • ½ cup grated Parmesan cheese

  • ½ cup breadcrumbs (optional)

  • 2 teaspoons Dijon mustard

  • 1 teaspoon fresh thyme leaves (optional)


Instructions

  • Preheat the oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.

  • Trim and halve the Brussels sprouts. Toss with olive oil, salt, and pepper, then roast for 15-20 minutes until tender and lightly browned.

  • In a medium saucepan, melt butter over medium heat. Whisk in flour and cook 1-2 minutes. Gradually add milk, whisking until smooth. Stir in garlic powder, onion powder, nutmeg, salt, and pepper.

  • Remove from heat and stir in Gruyère cheese and Dijon mustard until smooth. Adjust seasoning as needed.

  • Place roasted sprouts in the prepared baking dish and pour the cheese sauce over them, stirring gently to coat.

  • Mix Parmesan and breadcrumbs if using, then sprinkle over the top.

  • Bake uncovered for 20-25 minutes until golden and bubbly. Broil 2-3 minutes at the end for an extra crispy topping, if desired.

  • Let cool for a few minutes and garnish with fresh thyme before serving.
