  • 1 cup (227g) unsalted butter, softened

  • 3/4 cup (150g) granulated sugar

  • 1 large egg

  • 2 tsp vanilla extract

  • 2 1/2 cups (312g) all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup finely chopped pistachios

  • 1/2 cup colorful sprinkles


Instructions

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

  • Cream the butter and sugar together in a large bowl until light and fluffy, about 3–4 minutes.

  • Add the egg and vanilla extract, mixing until fully combined.

  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients, mixing just until incorporated.

  • Prepare your cookie press with your desired disc shape and fill it with the dough.

  • Press cookies onto the prepared baking sheets, leaving about 1 inch of space between each.

  • Sprinkle chopped pistachios and colorful sprinkles on top, gently pressing them into the dough.

  • Bake for 10–12 minutes, until edges are lightly golden and centers remain soft.

  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

  • Store in an airtight container for up to 5 days or freeze for longer storage.
