Ingredients
-
1 pound fresh green beans, trimmed and cut into 2-inch pieces
-
2 tablespoons unsalted butter
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
1 cup sliced mushrooms (optional)
-
1 can (10.5 ounces) condensed cream of mushroom soup
-
½ cup sour cream
-
½ cup milk
-
1 teaspoon soy sauce
-
½ teaspoon black pepper
-
¼ teaspoon salt
-
1 cup crispy fried onions (store-bought or homemade)
-
½ cup shredded cheddar cheese (optional)
Instructions
-
Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
-
Bring a large pot of salted water to a boil. Add green beans and cook 3–4 minutes until tender-crisp. Transfer to ice water to stop cooking, then drain.
-
In a skillet, melt butter over medium heat. Add onion and cook 4–5 minutes until translucent. Add garlic and mushrooms (if using) and sauté 2–3 minutes.
-
In a bowl, combine cream of mushroom soup, sour cream, milk, soy sauce, black pepper, and salt. Stir until smooth, then mix in the onion-mushroom mixture.
-
Fold the green beans into the creamy mixture until evenly coated. Adjust seasoning as needed.
-
Pour the mixture into the prepared baking dish. Spread evenly. Sprinkle cheddar cheese if using.
-
Bake for 25–30 minutes until hot and bubbling.
-
Remove from oven, sprinkle crispy fried onions over the top, and bake an additional 5–10 minutes until golden and crunchy.
-
Let cool 5 minutes before serving.
Notes
-
Use fresh green beans for best texture and flavor.
-
Blanching the green beans prevents mushiness and keeps them vibrant.
-
Homemade crispy onions can enhance flavor but store-bought works well for convenience.
-
The casserole can be made a day ahead; add crispy topping just before baking.
-
Optional cheddar cheese adds richness but can be omitted for a lighter version.
