  • 1 pound fresh green beans, trimmed and cut into 2-inch pieces

  • 2 tablespoons unsalted butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup sliced mushrooms (optional)

  • 1 can (10.5 ounces) condensed cream of mushroom soup

  • ½ cup sour cream

  • ½ cup milk

  • 1 teaspoon soy sauce

  • ½ teaspoon black pepper

  • ¼ teaspoon salt

  • 1 cup crispy fried onions (store-bought or homemade)

  • ½ cup shredded cheddar cheese (optional)


Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

  • Bring a large pot of salted water to a boil. Add green beans and cook 3–4 minutes until tender-crisp. Transfer to ice water to stop cooking, then drain.

  • In a skillet, melt butter over medium heat. Add onion and cook 4–5 minutes until translucent. Add garlic and mushrooms (if using) and sauté 2–3 minutes.

  • In a bowl, combine cream of mushroom soup, sour cream, milk, soy sauce, black pepper, and salt. Stir until smooth, then mix in the onion-mushroom mixture.

  • Fold the green beans into the creamy mixture until evenly coated. Adjust seasoning as needed.

  • Pour the mixture into the prepared baking dish. Spread evenly. Sprinkle cheddar cheese if using.

  • Bake for 25–30 minutes until hot and bubbling.

  • Remove from oven, sprinkle crispy fried onions over the top, and bake an additional 5–10 minutes until golden and crunchy.

  • Let cool 5 minutes before serving.
