3 cups fresh broccoli florets, lightly steamed

1 cup milk (whole or 2%)

½ teaspoon paprika (optional)

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 teaspoon Dijon mustard (optional)

Instructions

Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

In a skillet, heat olive oil over medium heat. Sauté onion for 3–4 minutes until translucent. Add garlic and cook 30 seconds.

Lightly steam broccoli for 2–3 minutes until tender but still crisp. Pat dry.

In a large bowl, whisk together eggs, milk, salt, pepper, paprika, Dijon mustard, and thyme or Italian seasoning.

Stir in sautéed onion and garlic mixture, steamed broccoli, and half of the cheddar and mozzarella cheeses.

Pour mixture into prepared baking dish and top with remaining cheddar, mozzarella, and Parmesan cheeses.
