  • 1 tablespoon olive oil or butter

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 3 cups fresh broccoli florets, lightly steamed

  • 8 large eggs

  • 1 cup milk (whole or 2%)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika (optional)

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • 1 teaspoon Dijon mustard (optional)

  • ½ teaspoon dried thyme or Italian seasoning


Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  • In a skillet, heat olive oil over medium heat. Sauté onion for 3–4 minutes until translucent. Add garlic and cook 30 seconds.

  • Lightly steam broccoli for 2–3 minutes until tender but still crisp. Pat dry.

  • In a large bowl, whisk together eggs, milk, salt, pepper, paprika, Dijon mustard, and thyme or Italian seasoning.

  • Stir in sautéed onion and garlic mixture, steamed broccoli, and half of the cheddar and mozzarella cheeses.

  • Pour mixture into prepared baking dish and top with remaining cheddar, mozzarella, and Parmesan cheeses.

  • Bake for 30–35 minutes until eggs are set and top is golden. Toothpick inserted in center should come out clean.

  • Let cool 5–10 minutes before slicing and serving.

Notes

  • Customize with additional vegetables like bell peppers, mushrooms, or spinach.

  • Use a variety of cheeses to enhance flavor.

  • Assemble ahead of time and refrigerate overnight; bake the next morning.

  • Store leftovers in an airtight container in the fridge for up to 4 days.
