Description

A cozy, family-friendly dinner that brings together tender chicken, sweet bell peppers, and melty mozzarella cheese.   • 2 cups cooked chicken, shredded or diced

  • 2 large bell peppers, diced (any colors)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup cooked rice or pasta (optional)

  • 2 cups shredded mozzarella cheese

  • 1 cup milk or cream

  • 1/2 cup grated Parmesan cheese

  • 1/2 teaspoon paprika

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt (adjust to taste)

  • 1 tablespoon olive oil or butter

  • Fresh parsley or basil for garnish


Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or butter.

  • Heat olive oil in a skillet over medium heat. Add the onion and cook for 3–4 minutes until softened. Stir in garlic and cook for another 30 seconds.

  • Add the diced bell peppers and cook for 5–6 minutes, until slightly softened. Season with paprika, oregano, salt, and black pepper.

  • In a large bowl, combine cooked chicken, sautéed vegetables, and cooked rice or pasta if using. Add half of the shredded mozzarella and pour in the milk or cream. Mix well.

  • Transfer the mixture to the baking dish and spread evenly. Top with the remaining mozzarella and Parmesan cheese.

  • Bake uncovered for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden.

  • Let rest for 5 minutes. Garnish with parsley or basil and serve warm.

Notes

  • Rotisserie chicken works great to save time and boost flavor.

  • Use multiple colors of bell peppers to make it more vibrant and appealing.

  • You can add extra vegetables like mushrooms, spinach, or zucchini for more nutrition.
