Ingredients

  • Large shrimp, peeled and deveined – 1½ pounds (680 g)

  • Olive oil – 2 tablespoons (30 ml)

  • Salt – ¾ teaspoon (4 g)

  • Black pepper – ½ teaspoon (2 g)

  • Paprika – 1 teaspoon (5 g)

  • Honey – â…“ cup (110 g)

  • Soy sauce – ¼ cup (60 ml)

  • Garlic, minced – 6 cloves (18 g)

  • Fresh ginger, grated – 1 teaspoon (5 g)

  • Rice vinegar – 1 tablespoon (15 ml)

  • Cornstarch – 1 teaspoon (3 g)

  • Water – 2 tablespoons (30 ml)

  • Jasmine rice – 1½ cups (300 g)

  • Water – 3 cups (720 ml)

  • Broccoli florets – 2 cups (180 g)

  • Carrots, shredded – 1 cup (120 g)

  • Red bell pepper, sliced – 1 large (200 g)

  • Green onions, sliced – ¼ cup (25 g)

  • Sesame seeds – 1 tablespoon (9 g)


Instructions

  • Rinse and cook the rice with water according to package instructions.

  • Whisk together honey, soy sauce, garlic, ginger, rice vinegar, cornstarch, and water.

  • Toss shrimp with olive oil, salt, pepper, and paprika.

  • Cook shrimp in a hot skillet for 1–2 minutes per side, then remove.

  • Sauté vegetables in the same skillet for 3–4 minutes.

  • Add sauce, cook until thickened, then return shrimp and toss to coat.

  • Assemble bowls with rice, shrimp, vegetables, and toppings.

Notes

Do not overcook the shrimp, and adjust the sauce sweetness to taste. Store components separately for best results when meal prepping.
