Instructions

  • Preheat the oven to 350°F (175°C). Blanch the green beans in boiling water for 3–4 minutes until tender-crisp, then transfer to ice water. Drain and set aside.

  • In a large skillet, melt the butter over medium heat. Add garlic and onion, cooking 3–4 minutes until fragrant and translucent.

  • Sprinkle flour over the onions and garlic, stirring for 1–2 minutes to form a roux. Gradually whisk in vegetable broth and heavy cream until thickened. Add salt, pepper, and thyme. Stir in shredded cheese if desired.

  • Add the green beans to the sauce, tossing to coat evenly.

  • Transfer the mixture to a greased 9×13-inch baking dish and smooth the top.

  • Sprinkle crispy fried onions evenly over the casserole. Bake uncovered for 25–30 minutes until bubbly and golden brown.

  • Allow the casserole to cool slightly before serving.

  • Fresh green beans give the best texture, but frozen can be used if thawed and drained.
