A warm, soothing chicken noodle soup infused with fresh ginger and garlic for natural comfort and nourishment.
Ingredients

1 tbsp (15 ml) olive oil

1 medium onion, diced

4 cloves garlic, minced

2 tbsp (24 g) fresh ginger, finely grated

3 large carrots, sliced

3 stalks celery, chopped

8 cups (1.9 L) chicken broth

1.5 lbs (680 g) boneless skinless chicken breast or thighs

1 tsp (5 g) salt
-
1/2 tsp (2 g) black pepper

1 tbsp (15 ml) soy sauce (optional)

6 oz (170 g) egg noodles or rice noodles

1 tbsp (15 ml) lemon juice
-
Fresh parsley or green onions for garnish
Instructions

Heat olive oil in a large pot and sauté onion until softened.

Add garlic and ginger; cook until fragrant.

Stir in carrots and celery; cook a few minutes.

Add broth, salt, pepper, soy sauce, and chicken. Simmer 25–30 minutes.

Remove chicken, shred it, and return it to the pot.

Add noodles and cook until tender.

Stir in lemon juice, adjust seasoning, and garnish before serving.
Notes
For freezing, omit the noodles and add them fresh when reheating.
