Description

A warm, soothing chicken noodle soup infused with fresh ginger and garlic for natural comfort and nourishment.


Ingredients

Scale
  • 1 tbsp (15 ml) olive oil

  • 1 medium onion, diced

  • 4 cloves garlic, minced

  • 2 tbsp (24 g) fresh ginger, finely grated

  • 3 large carrots, sliced

  • 3 stalks celery, chopped

  • 8 cups (1.9 L) chicken broth

  • 1.5 lbs (680 g) boneless skinless chicken breast or thighs

  • 1 tsp (5 g) salt

  • 1/2 tsp (2 g) black pepper

  • 1 tbsp (15 ml) soy sauce (optional)

  • 6 oz (170 g) egg noodles or rice noodles

  • 1 tbsp (15 ml) lemon juice

  • Fresh parsley or green onions for garnish


Instructions

  • Heat olive oil in a large pot and sauté onion until softened.

  • Add garlic and ginger; cook until fragrant.

  • Stir in carrots and celery; cook a few minutes.

  • Add broth, salt, pepper, soy sauce, and chicken. Simmer 25–30 minutes.

  • Remove chicken, shred it, and return it to the pot.

  • Add noodles and cook until tender.

  • Stir in lemon juice, adjust seasoning, and garnish before serving.

Notes

For freezing, omit the noodles and add them fresh when reheating.
