Corned beef brisket – 3 pounds (1.36 kg)

Water – 4 cups (960 ml)

Yellow onion – 1 large (200 g), quartered

Garlic cloves – 4 cloves (12 g), crushed

Bay leaves – 2

Black peppercorns – 1 teaspoon (3 g)

Carrots – 4 medium (450 g), chopped

Yukon Gold potatoes – 1.5 pounds (680 g), halved

Green cabbage – 1 small head (900 g), wedged

Olive oil – 1 tablespoon (15 ml)

Salt – to taste

Ground black pepper – to taste
Instructions

Rinse and pat dry the corned beef.

Place onion, garlic, bay leaves, and peppercorns in the Instant Pot.

Add corned beef and sprinkle seasoning packet on top.

Pour in water, seal lid, and cook on High Pressure for 85 minutes.

Allow a 15-minute natural release, then vent.

Add carrots, potatoes, and cabbage, drizzle with olive oil, and season lightly.

Cook on High Pressure for 10 minutes, then quick release.

Rest beef for 10 minutes and slice against the grain before serving.
