  • Corned beef brisket – 3 pounds (1.36 kg)

  • Water – 4 cups (960 ml)

  • Yellow onion – 1 large (200 g), quartered

  • Garlic cloves – 4 cloves (12 g), crushed

  • Bay leaves – 2

  • Black peppercorns – 1 teaspoon (3 g)

  • Carrots – 4 medium (450 g), chopped

  • Yukon Gold potatoes – 1.5 pounds (680 g), halved

  • Green cabbage – 1 small head (900 g), wedged

  • Olive oil – 1 tablespoon (15 ml)

  • Salt – to taste

  • Ground black pepper – to taste


Instructions

  • Rinse and pat dry the corned beef.

  • Place onion, garlic, bay leaves, and peppercorns in the Instant Pot.

  • Add corned beef and sprinkle seasoning packet on top.

  • Pour in water, seal lid, and cook on High Pressure for 85 minutes.

  • Allow a 15-minute natural release, then vent.

  • Add carrots, potatoes, and cabbage, drizzle with olive oil, and season lightly.

  • Cook on High Pressure for 10 minutes, then quick release.

  • Rest beef for 10 minutes and slice against the grain before serving.

Notes

  • Always slice the beef against the grain for tenderness.

  • Store leftovers with some cooking liquid to keep the meat moist.

  • Vegetables can be cooked separately if preferred.
