Ingredients

  • 1 lb (450 g) ground beef

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 3 medium potatoes, peeled and diced (about 3 cups / 450 g)

  • 1 cup (150 g) corn kernels

  • 1 cup (150 g) cooked black beans

  • 1 can (10.5 oz / 300 g) condensed cream-style soup

  • 1 cup (240 ml) beef broth

  • 2 tablespoons tomato paste

  • 1 cup (115 g) shredded cheddar-style cheese

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon smoked paprika

  • 1 teaspoon ground cumin

  • ½ teaspoon dried thyme


Instructions

  • Brown the ground beef in a skillet over medium heat for 6–8 minutes. Drain excess fat.

  • Add onion and garlic; cook for 3–4 minutes until softened.

  • Transfer beef mixture to the slow cooker. Add potatoes, corn, and black beans.

  • In a bowl, mix soup, broth, tomato paste, and seasonings. Pour over the slow cooker contents.

  • Cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.

  • Sprinkle cheese on top during the last 15 minutes and allow it to melt before serving.
