A comforting, slow-cooked casserole inspired by rustic cowboy-style meals, perfect for cozy dinners and busy days.
Ingredients

1 lb (450 g) ground beef

1 medium onion, diced

2 cloves garlic, minced

3 medium potatoes, peeled and diced (about 3 cups / 450 g)

1 cup (150 g) corn kernels

1 cup (150 g) cooked black beans

1 can (10.5 oz / 300 g) condensed cream-style soup

1 cup (240 ml) beef broth

2 tablespoons tomato paste

1 cup (115 g) shredded cheddar-style cheese

1 teaspoon salt
-
½ teaspoon black pepper
-
1 teaspoon smoked paprika

1 teaspoon ground cumin
-
½ teaspoon dried thyme
Instructions

Brown the ground beef in a skillet over medium heat for 6–8 minutes. Drain excess fat.

Add onion and garlic; cook for 3–4 minutes until softened.

Transfer beef mixture to the slow cooker. Add potatoes, corn, and black beans.

In a bowl, mix soup, broth, tomato paste, and seasonings. Pour over the slow cooker contents.

Cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.

Sprinkle cheese on top during the last 15 minutes and allow it to melt before serving.
