  • 1 loaf challah or brioche bread, cut into 1-inch cubes

  • 1 cup walnuts, roughly chopped

  • 8 large eggs

  • 2 cups whole milk

  • 1 cup heavy cream

  • 1/2 cup pure maple syrup

  • 1/4 cup granulated sugar

  • 2 teaspoons vanilla extract

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • Pinch of salt

  • Optional: powdered sugar for serving


Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish. Arrange the cubed bread evenly in the dish and sprinkle the walnuts on top.

  • In a large bowl, whisk together eggs, milk, heavy cream, maple syrup, sugar, vanilla, cinnamon, nutmeg, and salt until smooth.

  • Pour the custard mixture evenly over the bread, pressing down gently so the bread absorbs the liquid.

  • Cover with plastic wrap and refrigerate for at least 4 hours or overnight for best results.

  • Remove from the refrigerator 30 minutes before baking. Cover with foil and bake for 35 minutes. Remove the foil and bake an additional 15-20 minutes until the top is golden brown.

  • Allow to cool for 5-10 minutes before serving. Dust with powdered sugar and drizzle with maple syrup if desired.

  • Store leftovers covered in the refrigerator for up to 3 days. Reheat in the oven at 325°F (165°C) for 10-15 minutes.

  • Day-old bread works best for absorbing the custard without becoming too soggy.
