Ingredients

1 pound (450 g) ground beef

1 cup (200 g) uncooked long-grain white rice

2 cups (480 ml) beef broth

1 medium onion, finely chopped (about 1 cup / 150 g)

2 cloves garlic, minced

1 cup (240 ml) whole milk

1 cup (240 g) sour cream

2 cups (200 g) shredded cheddar cheese

1 cup (100 g) shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1/2 teaspoon dried thyme

2 tablespoons chopped fresh parsley (optional)
Instructions

Cook the rice with beef broth according to package instructions until tender. Set aside.

Heat olive oil in a skillet over medium heat. Sauté onion until softened, add garlic, then brown the ground beef.

Season the beef with salt, pepper, paprika, and thyme.

Stir in milk and sour cream until creamy and well combined.

Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

Spread rice evenly in the dish, top with beef mixture, then sprinkle with cheeses.

Bake uncovered for 25–30 minutes until bubbly and golden.

Rest for 5 minutes before serving and garnish if desired.
Notes
This casserole can be assembled ahead of time and baked later. For added creaminess, a small splash of milk can be added before reheating leftovers.
