  • 1 ½ pounds fresh Brussels sprouts, trimmed and halved

  • 3 tablespoons olive oil

  • Salt and pepper, to taste

  • ¼ cup honey

  • 2 tablespoons Dijon mustard

  • 1 teaspoon apple cider vinegar

  • 2 cloves garlic, minced

  • Optional: ¼ teaspoon crushed red pepper flakes


Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  • Trim the ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Slice them in half lengthwise for even cooking.

  • In a large mixing bowl, toss the Brussels sprouts with olive oil, salt, and pepper until evenly coated.

  • Spread the sprouts in a single layer on the prepared baking sheet. Roast for 20–25 minutes, turning halfway through, until tender and slightly caramelized.

  • While roasting, whisk together honey, Dijon mustard, apple cider vinegar, minced garlic, and crushed red pepper flakes in a small bowl to make the glaze.

  • Remove the roasted Brussels sprouts from the oven and drizzle with the honey mustard glaze. Toss gently to coat each sprout evenly.

  • Return to the oven for an additional 5–7 minutes to allow the glaze to thicken and caramelize.

  • Transfer to a serving dish and enjoy warm. Garnish with sesame seeds or chopped parsley if desired.

  • Choose small, firm Brussels sprouts for the best flavor and texture.

  • Don’t overcrowd the pan to ensure proper roasting.
