Corn kernels – 3 cups (450 g)

Butter – 1 tablespoon (14 g)

Mayonnaise – ½ cup (120 g)

Sour cream – ¼ cup (60 g)

Lime juice – 1 tablespoon (15 ml)

Long-grain white rice – 1½ cups (300 g)

Water – 3 cups (720 ml)

Fresh cilantro – ¼ cup (10 g), chopped

Instructions

Rinse and cook the rice with water according to package instructions.

Toss chicken with olive oil, chili powder, cumin, garlic powder, smoked paprika, ¾ teaspoon salt, and black pepper.

Cook chicken in a skillet over medium-high heat for 6–8 minutes until cooked through.

In the same skillet, melt butter, add corn, and cook for 4–5 minutes. Remove from heat and stir in mayonnaise, sour cream, lime juice, chili powder, and remaining salt.

Assemble bowls with rice, chicken, creamy corn, and desired toppings.
