Ingredients

  • Boneless, skinless chicken breasts – 1½ pounds (680 g), cubed

  • Olive oil – 2 tablespoons (30 ml)

  • Chili powder – 1½ teaspoons (8 g)

  • Ground cumin – 1 teaspoon (5 g)

  • Garlic powder – 1 teaspoon (5 g)

  • Smoked paprika – 1 teaspoon (5 g)

  • Salt – 1¼ teaspoons (7 g), divided

  • Black pepper – ½ teaspoon (2 g)

  • Corn kernels – 3 cups (450 g)

  • Butter – 1 tablespoon (14 g)

  • Mayonnaise – ½ cup (120 g)

  • Sour cream – ¼ cup (60 g)

  • Lime juice – 1 tablespoon (15 ml)

  • Long-grain white rice – 1½ cups (300 g)

  • Water – 3 cups (720 ml)

  • Fresh cilantro – ¼ cup (10 g), chopped

  • Green onions – ¼ cup (25 g), sliced

  • Avocado – 2 medium (300 g), sliced


Instructions

  • Rinse and cook the rice with water according to package instructions.

  • Toss chicken with olive oil, chili powder, cumin, garlic powder, smoked paprika, ¾ teaspoon salt, and black pepper.

  • Cook chicken in a skillet over medium-high heat for 6–8 minutes until cooked through.

  • In the same skillet, melt butter, add corn, and cook for 4–5 minutes. Remove from heat and stir in mayonnaise, sour cream, lime juice, chili powder, and remaining salt.

  • Assemble bowls with rice, chicken, creamy corn, and desired toppings.
