Ingredients

  • 900 g ground beef

  • 1 cup (60 g) breadcrumbs

  • 3/4 cup (180 ml) milk

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 2 large eggs

  • 3 tablespoons ketchup

  • 1 tablespoon Worcestershire-style sauce

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried thyme

  • 2 tablespoons olive oil

  • 2 tablespoons butter

  • 250 g mushrooms, sliced

  • 2 cloves garlic, minced

  • 2 tablespoons all-purpose flour

  • 2 cups (480 ml) beef broth

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper


Instructions

  • Preheat the oven to 180°C. Grease a loaf pan or line a baking sheet.

  • In a bowl, combine breadcrumbs and milk. Let soak for 2 minutes.

  • Add ground beef, onion, garlic, eggs, ketchup, Worcestershire-style sauce, salt, pepper, smoked paprika, and thyme. Mix gently.

  • Shape the mixture into a loaf and place in the prepared pan.

  • Bake for 50–60 minutes until fully cooked. Remove and let rest.

  • Heat olive oil and butter in a skillet. Add mushrooms and cook until softened.

  • Stir in garlic and flour. Cook for 1 minute.

  • Gradually add beef broth, stirring until thickened. Season with salt and pepper.

  • Slice meatloaf and serve topped with mushroom gravy.

Notes

  • Do not overmix the meat to keep the texture tender.

  • Let the meatloaf rest before slicing to retain juices.

  • Add extra broth to the gravy if a thinner consistency is desired.
