With roasted peppers, caramelized onions, and melted cheese wrapped in a warm tortilla, every bite is packed with comfort and satisfaction. 2 cups cooked prime rib, thinly sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 teaspoon garlic powder

1 teaspoon paprika

4 large flour tortillas (10-inch)

1 ½ cups shredded provolone or mozzarella cheese

¼ cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon sour cream

1 teaspoon lemon juice

Fresh parsley, chopped (optional for garnish)
Instructions

Heat olive oil in a skillet over medium heat. Add sliced onions and bell peppers. Sauté for 8–10 minutes until soft and slightly caramelized. Sprinkle garlic powder, onion powder, paprika, salt, and pepper. Stir and cook 2 more minutes. Remove from pan and set aside.

In the same skillet, add sliced prime rib. Heat for 2–3 minutes, stirring occasionally, until just warmed through. Avoid overcooking to keep the meat tender and juicy.

In a small bowl, whisk together mayonnaise, Dijon mustard, sour cream, and lemon juice until smooth. Set aside as your creamy sauce.

Lay tortillas flat on a clean surface. Spread a thin layer of sauce on each tortilla. Add sliced prime rib, sautéed peppers and onions, and sprinkle shredded cheese over the top.

Fold in the sides of each tortilla and roll tightly from the bottom up.

Wipe out the skillet and place it back on medium heat. Toast each wrap for 2–3 minutes per side until golden and crisp, and the cheese melts inside.
