Ingredients

  • 1½ pounds (680 g) sirloin, ribeye, or tenderloin steak, cut into 1-inch cubes

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 4 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 1 cup (240 ml) heavy cream

  • ¾ cup (75 g) freshly grated Parmesan cheese

  • ½ teaspoon garlic powder

  • ½ teaspoon Italian seasoning

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper


Instructions

  • Pat the steak cubes dry and season with salt and black pepper.

  • Heat olive oil in a large skillet over medium-high heat.

  • Sear steak bites for 2–3 minutes per side until browned. Remove and set aside.

  • Reduce heat to medium, add butter, and melt. Add garlic and sauté for 30–40 seconds.

  • Pour in heavy cream, add seasonings, and simmer for 3–4 minutes.

  • Stir in Parmesan cheese until melted and smooth.

  • Return steak bites to the pan, toss to coat, and simmer for 1–2 minutes. Serve warm.

Notes

  • Use freshly grated Parmesan for the smoothest sauce.

  • Do not overcrowd the pan when searing the steak; cook in batches if needed.
