- 2 pounds beef chuck, cut into 1½-inch cubes
- 1½ pounds baby potatoes, halved
- 6 tablespoons unsalted butter, melted
- 6 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon cornstarch (optional)
- 2 tablespoons water (optional)
- Fresh parsley, chopped
Instructions
- Heat olive oil in a skillet and sear seasoned beef cubes until browned.
- Mix melted butter, garlic, paprika, thyme, and rosemary in a bowl.
- Place potatoes in the slow cooker, top with beef, and pour garlic butter mixture and beef broth over everything.
- Cook on low for 6–7 hours or on high for 3–4 hours.
- Optional: Thicken sauce with cornstarch slurry during the last 30 minutes.
- Garnish with parsley and serve warm.
Notes
For best results, use well-marbled beef and avoid lifting the slow cooker lid during cooking to maintain consistent heat.
