Ingredients

  • 2 pounds beef chuck, cut into 1½-inch cubes
  • 1½ pounds baby potatoes, halved
  • 6 tablespoons unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon cornstarch (optional)
  • 2 tablespoons water (optional)
  • Fresh parsley, chopped

Instructions

  1. Heat olive oil in a skillet and sear seasoned beef cubes until browned.
  2. Mix melted butter, garlic, paprika, thyme, and rosemary in a bowl.
  3. Place potatoes in the slow cooker, top with beef, and pour garlic butter mixture and beef broth over everything.
  4. Cook on low for 6–7 hours or on high for 3–4 hours.
  5. Optional: Thicken sauce with cornstarch slurry during the last 30 minutes.
  6. Garnish with parsley and serve warm.

Notes

For best results, use well-marbled beef and avoid lifting the slow cooker lid during cooking to maintain consistent heat.
