  • 1 cup freshly grated Parmesan cheese (avoid pre-shredded)

  • 1 teaspoon finely chopped fresh rosemary (plus extra for garnish, optional)

  • Freshly ground black pepper, to taste

  • Non-stick baking sheet or parchment paper


Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.

  • In a small bowl, mix together the grated Parmesan and chopped rosemary. Add a light sprinkle of black pepper if desired.

  • Drop 1 tablespoon of the mixture onto the prepared baking sheet for each crisp, spacing them about 1 inch apart. Flatten each portion into thin circles about 2–3 inches wide.

  • Bake for 5–7 minutes, or until golden and bubbly around the edges. Keep a close watch to avoid overbaking.
