Description

 A fast, comforting, and flavorful bite-sized dish perfect for busy weeknights or casual gatherings.


Ingredients

  • 1 lb (450 g) ground beef or ground chicken
  • 1 packet taco seasoning (about 1 oz / 28 g)
  • 1/2 cup (120 ml) ranch dressing
  • 1 1/2 cups (170 g) shredded cheddar cheese
  • 1 cup (110 g) shredded mozzarella cheese
  • 1 can refrigerated biscuit dough (about 16 oz / 450 g)
  • 1 tablespoon olive oil
  • Optional: 1/4 cup (40 g) finely diced onion or bell pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking sheet or muffin tin.
  2. Heat olive oil in a skillet over medium heat. Add the ground beef or chicken and cook until fully browned.
  3. Stir in the taco seasoning and optional diced vegetables. Cook for 2–3 minutes until well combined.
  4. Remove from heat and mix in the ranch dressing and shredded cheeses until evenly incorporated.
  5. Separate the biscuit dough and flatten each piece into a small round.
  6. Spoon a generous tablespoon of filling into the center of each dough round.
  7. Fold the edges up and pinch tightly to seal, forming a ball.
  8. Place seam-side down on the prepared baking sheet or in the muffin tin.
  9. Bake for 15–18 minutes, or until golden brown and cooked through.
  10. Let cool slightly before serving.

Notes

  • Make sure the dough is well sealed to prevent leaking during baking.
  • These bites can be prepared ahead and baked when needed.
  • For best texture when reheating, use the oven instead of the microwave.
