- 1 lb (450 g) ground beef or ground chicken
- 1 packet taco seasoning (about 1 oz / 28 g)
- 1/2 cup (120 ml) ranch dressing
- 1 1/2 cups (170 g) shredded cheddar cheese
- 1 cup (110 g) shredded mozzarella cheese
- 1 can refrigerated biscuit dough (about 16 oz / 450 g)
- 1 tablespoon olive oil
- Optional: 1/4 cup (40 g) finely diced onion or bell pepper
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking sheet or muffin tin.
- Heat olive oil in a skillet over medium heat. Add the ground beef or chicken and cook until fully browned.
- Stir in the taco seasoning and optional diced vegetables. Cook for 2–3 minutes until well combined.
- Remove from heat and mix in the ranch dressing and shredded cheeses until evenly incorporated.
- Separate the biscuit dough and flatten each piece into a small round.
- Spoon a generous tablespoon of filling into the center of each dough round.
- Fold the edges up and pinch tightly to seal, forming a ball.
- Place seam-side down on the prepared baking sheet or in the muffin tin.
- Bake for 15–18 minutes, or until golden brown and cooked through.
- Let cool slightly before serving.
Notes
- Make sure the dough is well sealed to prevent leaking during baking.
- These bites can be prepared ahead and baked when needed.
- For best texture when reheating, use the oven instead of the microwave.
