  • 4 boneless, skinless chicken breasts (or thighs)

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 1/2 cup chicken broth

  • 1/2 cup heavy cream

  • 3 tablespoons Dijon mustard

  • 1 teaspoon whole-grain mustard (optional)

  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

  • Salt and black pepper to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Pat the chicken dry and season both sides with salt and black pepper.

  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5–6 minutes per side until golden brown and cooked through. Remove chicken and set aside.

  • Reduce heat to medium. Add chopped onion and cook 3–4 minutes until softened. Add garlic and cook 30 seconds until fragrant.

  • Pour in chicken broth, scraping up any browned bits. Simmer 2–3 minutes.

  • Stir in Dijon mustard, whole-grain mustard (if using), and thyme. Add heavy cream and mix until sauce thickens slightly.

  • Return chicken to the skillet, spooning sauce over each piece. Simmer 2–3 minutes to heat through and coat chicken.

  • Garnish with fresh parsley before serving.

Notes

  • Chicken thighs can be used for a juicier alternative; adjust cooking time as needed.

  • For a dairy-free version, substitute heavy cream with coconut cream or a dairy-free cream alternative.

  • To thicken the sauce, simmer longer or add a cornstarch slurry (1 teaspoon cornstarch + 1 tablespoon water).

  • Serve with mashed potatoes, rice, or roasted vegetables for a complete meal.
