  • 1 pound ground beef or ground turkey

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 can (10.5 oz) cream of mushroom soup

  • 1/2 cup sour cream

  • 1 cup shredded cheddar cheese, divided

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon paprika (optional)

  • 1 cup frozen mixed vegetables (peas, carrots, corn)

  • 1 package (32 oz) frozen tater tots

  • 2 tablespoons melted butter


Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

  • In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat if necessary.

  • Add the chopped onion and minced garlic to the skillet. Sauté for 3–4 minutes until fragrant and softened.

  • Stir in the cream of mushroom soup, sour cream, salt, pepper, and paprika. Mix until smooth and combined.

  • Add the frozen mixed vegetables and half of the shredded cheddar cheese. Stir gently to distribute evenly.

  • Transfer the mixture into the prepared baking dish and spread into an even layer.

  • Arrange the frozen tater tots in a single layer across the top of the filling.

  • Drizzle the melted butter over the tater tots for extra crispiness.

  • Sprinkle the remaining cheddar cheese evenly over the top.

  • Bake uncovered for 35–40 minutes or until the casserole is bubbling and the tater tots are crisp and golden brown.

  • Let the casserole rest for 5 minutes before serving so the filling sets properly.

Notes

  • For a leaner version, use ground turkey, and substitute Greek yogurt for part of the sour cream.

  • Broil the casserole for an additional 2–3 minutes at the end if you want extra crisp tater tots.

  • You can add extra vegetables like bell peppers or broccoli to increase nutrition.

  • Try swapping cheddar for Monterey Jack or Colby for a different cheesy flavor.
