Ingredients
-
8 large eggs
-
1 cup whole milk (or any preferred milk)
-
1 cup cherry tomatoes, halved
-
1/2 cup fresh basil leaves, chopped
-
1 cup shredded mozzarella cheese
-
1/2 cup grated Parmesan cheese
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
1 tablespoon olive oil
-
1 teaspoon salt
-
1/2 teaspoon black pepper
-
1/2 teaspoon dried oregano
-
Optional: red pepper flakes for a little heat
Instructions
-
Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
-
Heat olive oil in a skillet over medium heat. Sauté chopped onion until translucent, about 3–4 minutes. Add minced garlic and cook for another 30 seconds. Remove from heat.
-
In a large bowl, whisk together eggs, milk, salt, black pepper, and dried oregano until well combined.
-
Spread the sautéed onion and garlic evenly in the baking dish. Layer the halved cherry tomatoes on top, followed by chopped basil. Sprinkle half of the mozzarella and Parmesan cheeses over the vegetables.
-
Pour the egg mixture evenly over the layers. Top with the remaining cheeses and, if desired, sprinkle with red pepper flakes.
-
Bake for 30–35 minutes, or until eggs are set and the top is lightly golden. A knife inserted in the center should come out clean.
-
Let the egg bake cool for 5–10 minutes before slicing. Garnish with extra fresh basil if desired and serve warm.
Notes
-
Use fresh, ripe tomatoes for the best flavor.
-
Room temperature eggs help the bake cook evenly.
-
Add other vegetables like spinach, bell peppers, or zucchini for variety.
-
Cheese options can be adjusted for creaminess or flavor—mozzarella, cheddar, or feta all work well.
-
Can be assembled ahead of time and refrigerated overnight for convenience.
