  • 2 cups cooked chicken, shredded

  • 4 cups fresh spinach, chopped

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 6 large eggs

  • 1 cup milk

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon dried Italian herbs (optional)

  • 1/2 cup diced bell peppers (optional)

  • 1 tablespoon olive oil or butter


Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil or butter.

  • In a skillet over medium heat, sauté chopped spinach and bell peppers (if using) in olive oil until wilted, about 3–4 minutes. Remove from heat and let cool slightly.

  • In a large bowl, combine shredded cheddar and mozzarella cheeses. Reserve 1/4 cup for topping.

  • In another bowl, whisk together eggs, milk, garlic powder, onion powder, salt, pepper, and Italian herbs until smooth.

  • Layer the cooked chicken at the bottom of the prepared dish. Spread the sautéed spinach and bell peppers evenly over the chicken. Sprinkle the mixed cheeses on top.

  • Pour the egg mixture gently over all ingredients.

  • Sprinkle the reserved cheese on top for a golden finish.

  • Bake for 35–40 minutes, or until eggs are fully set and the top is lightly golden. Check doneness with a knife; it should come out clean.

  • Let the casserole rest for 5–10 minutes before slicing. Serve warm.
