Ingredients
-
10 large eggs
-
1 cup milk (whole or 2%)
-
2 cups fresh spinach, chopped
-
1 cup crumbled feta cheese
-
1 cup shredded mozzarella cheese
-
½ cup diced onion
-
1 red bell pepper, diced
-
2 cloves garlic, minced
-
1 teaspoon salt
-
½ teaspoon black pepper
-
½ teaspoon dried oregano
-
½ teaspoon paprika
-
1 tablespoon olive oil (for sautéing)
-
Nonstick cooking spray or butter for greasing the baking dish
Instructions
-
Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with nonstick spray or butter.
-
In a skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, cooking for 3–4 minutes until softened.
-
Stir in the minced garlic and chopped spinach, cooking just until the spinach wilts. Remove from heat and let cool slightly.
-
In a large bowl, whisk together the eggs, milk, salt, black pepper, oregano, and paprika until smooth and slightly frothy.
-
Add the feta and mozzarella cheeses, then fold in the sautéed vegetables until well combined.
-
Pour the mixture into the prepared baking dish and spread evenly.
-
Bake for 35–40 minutes, or until the center is set and the top is golden brown.
-
Let the casserole rest for 5–10 minutes before slicing and serving.
Notes
-
If using frozen spinach, thaw completely and squeeze out excess liquid before adding.
-
Substitute half of the milk with heavy cream for a richer texture.
-
Store leftovers in an airtight container in the refrigerator for up to 4 days.
-
Add extra cheese on top before baking for a golden, bubbly crust.
-
For variety, mix in sun-dried tomatoes, mushrooms, or cooked chicken for added flavor.
