  • 1 cup milk (whole or 2%)

  • 2 cups fresh spinach, chopped

  • 1 cup crumbled feta cheese

  • 1 cup shredded mozzarella cheese

  • ½ cup diced onion

  • 1 red bell pepper, diced

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon dried oregano

  • ½ teaspoon paprika

  • 1 tablespoon olive oil (for sautéing)

  • Nonstick cooking spray or butter for greasing the baking dish


Instructions

  • Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with nonstick spray or butter.

  • In a skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, cooking for 3–4 minutes until softened.

  • Stir in the minced garlic and chopped spinach, cooking just until the spinach wilts. Remove from heat and let cool slightly.

  • In a large bowl, whisk together the eggs, milk, salt, black pepper, oregano, and paprika until smooth and slightly frothy.

  • Add the feta and mozzarella cheeses, then fold in the sautéed vegetables until well combined.

  • Pour the mixture into the prepared baking dish and spread evenly.

  • Bake for 35–40 minutes, or until the center is set and the top is golden brown.

  • Let the casserole rest for 5–10 minutes before slicing and serving.

Notes

  • If using frozen spinach, thaw completely and squeeze out excess liquid before adding.
