  • 4 large russet potatoes

  • 2 tablespoons olive oil

  • 1 cup mushrooms, finely chopped

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon fresh thyme, chopped

  • 1 teaspoon fresh rosemary, chopped

  • ½ teaspoon salt, or to taste

  • ½ teaspoon black pepper, or to taste

  • ¼ cup unsalted butter

  • ½ cup sour cream

  • ½ cup shredded cheddar cheese, divided

  • ¼ cup grated Parmesan cheese

  • 2 tablespoons milk (optional, for extra creaminess)

  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  • Preheat oven to 400°F (200°C). Wash potatoes, prick with a fork, and rub with olive oil. Bake on a sheet for 45–60 minutes until tender. Let cool slightly.

  • Heat olive oil in a skillet over medium heat. Sauté onions until translucent, 3–4 minutes. Add garlic and cook 1 minute. Stir in mushrooms and cook until golden, 5–7 minutes. Season with thyme, rosemary, salt, and pepper. Remove from heat.

  • Slice off the top third of each potato. Scoop out the flesh into a bowl, leaving ¼ inch around the edges. Mash potato with butter, sour cream, half of the cheddar, and Parmesan. Mix in mushroom mixture. Add milk if desired.

  • Spoon filling back into potato shells. Top with remaining cheddar.

  • Bake at 375°F (190°C) for 15–20 minutes until cheese is melted and golden. Garnish with parsley. Serve warm.
