4 large russet potatoes

1 cup mushrooms, finely chopped

¼ cup unsalted butter

½ cup sour cream

½ cup shredded cheddar cheese, divided

¼ cup grated Parmesan cheese

2 tablespoons milk (optional, for extra creaminess)

2 tablespoons fresh parsley, chopped (for garnish)
Instructions

Preheat oven to 400°F (200°C). Wash potatoes, prick with a fork, and rub with olive oil. Bake on a sheet for 45–60 minutes until tender. Let cool slightly.

Heat olive oil in a skillet over medium heat. Sauté onions until translucent, 3–4 minutes. Add garlic and cook 1 minute. Stir in mushrooms and cook until golden, 5–7 minutes. Season with thyme, rosemary, salt, and pepper. Remove from heat.

Slice off the top third of each potato. Scoop out the flesh into a bowl, leaving ¼ inch around the edges. Mash potato with butter, sour cream, half of the cheddar, and Parmesan. Mix in mushroom mixture. Add milk if desired.

Spoon filling back into potato shells. Top with remaining cheddar.

Bake at 375°F (190°C) for 15–20 minutes until cheese is melted and golden. Garnish with parsley. Serve warm.
