  • 3 cups cooked prime rib, diced or shredded

  • 4 cups broccoli florets, fresh or frozen (thawed)

  • 2 cups shredded cheddar cheese, divided

  • 1 cup Monterey Jack cheese, shredded

  • 1 cup sour cream

  • 1 can (10.5 oz) cream of mushroom soup

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon smoked paprika (optional)

  • ½ teaspoon salt, or to taste

  • ¼ teaspoon black pepper

  • 1 tablespoon butter

  • 1 ½ cups crushed Ritz crackers or plain breadcrumbs

  • ¼ cup melted butter (for topping)


Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with nonstick spray or butter.

  • If using fresh broccoli, bring a pot of salted water to a boil. Add broccoli florets and cook for 2–3 minutes until just tender. Drain and rinse with cold water. If using frozen broccoli, thaw completely and pat dry.

  • In a large bowl, mix the cream of mushroom soup, sour cream, 1½ cups cheddar cheese, Monterey Jack cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until smooth and creamy.

  • Add the diced prime rib and blanched broccoli to the mixture, gently folding until everything is evenly coated.

  • Transfer the mixture to the prepared baking dish, spreading it evenly. Top with the remaining ½ cup cheddar cheese.

  • In a small bowl, combine crushed Ritz crackers (or breadcrumbs) with ¼ cup melted butter. Mix until coated. Sprinkle the topping evenly over the casserole.

  • Bake uncovered for 25–30 minutes, or until the casserole is bubbling around the edges and the topping is golden brown.

  • Remove from the oven and let it cool for 5–10 minutes before serving. This helps the sauce thicken and makes serving easier.
