- 2 tablespoons olive oil
- 450 g (1 lb) ground beef
- 1 small onion, finely diced (150 g / 5 oz)
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon black pepper
- ¾ teaspoon salt
- 1 cup fire-roasted diced tomatoes (240 g / 8.5 oz), drained
- 1 cup cooked black beans (170 g / 6 oz)
- 225 g (8 oz) cream cheese, cubed
- 2 cups shredded sharp cheddar cheese (200 g / 7 oz)
- 1 cup shredded Monterey Jack cheese (100 g / 3.5 oz)
- ¾ cup whole milk (180 ml / 6 fl oz)
- 1 small jalapeño, finely diced (optional)
- 2 tablespoons chopped fresh cilantro (optional)
Instructions
- Heat olive oil in a large skillet over medium heat and cook ground beef until browned.
- Add onion and cook until softened, then stir in garlic.
- Add spices, salt, tomatoes, and black beans, stirring well.
- Reduce heat, add cream cheese and milk, and stir until smooth.
- Gradually add shredded cheeses, stirring until melted and creamy.
- Stir in jalapeño and cilantro if using, then serve warm.
Notes
Keep heat low when melting cheese to maintain a smooth texture. Add a splash of milk when reheating if needed.
