This bold, creamy queso is packed with smoky spices, melted cheese, and hearty ingredients, making it perfect for sharing at gatherings or enjoying as a comforting snack.


Ingredients

  • 2 tablespoons olive oil
  • 450 g (1 lb) ground beef
  • 1 small onion, finely diced (150 g / 5 oz)
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon black pepper
  • ¾ teaspoon salt
  • 1 cup fire-roasted diced tomatoes (240 g / 8.5 oz), drained
  • 1 cup cooked black beans (170 g / 6 oz)
  • 225 g (8 oz) cream cheese, cubed
  • 2 cups shredded sharp cheddar cheese (200 g / 7 oz)
  • 1 cup shredded Monterey Jack cheese (100 g / 3.5 oz)
  • ¾ cup whole milk (180 ml / 6 fl oz)
  • 1 small jalapeño, finely diced (optional)
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat and cook ground beef until browned.
  2. Add onion and cook until softened, then stir in garlic.
  3. Add spices, salt, tomatoes, and black beans, stirring well.
  4. Reduce heat, add cream cheese and milk, and stir until smooth.
  5. Gradually add shredded cheeses, stirring until melted and creamy.
  6. Stir in jalapeño and cilantro if using, then serve warm.

Notes

Keep heat low when melting cheese to maintain a smooth texture. Add a splash of milk when reheating if needed.
