  • 1 cup (226g) unsalted butter, softened

  • 1/2 cup (100g) granulated sugar

  • 1 teaspoon pure vanilla extract

  • Zest of 2 lemons

  • 2 cups (240g) all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 1/2 cups (180g) powdered sugar, for rolling


Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

  • Mix in the vanilla extract and lemon zest until evenly distributed.

  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, mixing on low speed until a soft dough forms.

  • Scoop or roll the dough into 1-inch balls and place them on the prepared baking sheets about 2 inches apart.

  • Bake for 12–15 minutes, until edges are lightly golden but centers remain slightly soft.

  • Allow cookies to cool on the baking sheet for 5 minutes.

  • Roll each warm cookie in powdered sugar until fully coated.

  • Transfer to a wire rack to cool completely and roll in powdered sugar a second time for a snowy finish.

  • Serve and enjoy with tea, coffee, or milk.
