1 1/2 cups (180g) powdered sugar, for rolling
Instructions

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Mix in the vanilla extract and lemon zest until evenly distributed.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, mixing on low speed until a soft dough forms.

Scoop or roll the dough into 1-inch balls and place them on the prepared baking sheets about 2 inches apart.
