Ingredients

4 slices of sourdough or artisanal bread

4 oz cream cheese, softened

1 cup fresh blueberries

1 tablespoon honey or maple syrup

1 teaspoon lemon zest (optional)

4 slices mild cheddar or Gruyère cheese

2 tablespoons unsalted butter, softened

A pinch of salt
Optional: fresh basil leaves, balsamic glaze
Instructions

In a small bowl, combine blueberries, honey (or maple syrup), and lemon zest. Mash a few berries lightly and set aside.

Spread cream cheese evenly on one side of each bread slice.

On two slices, layer half of the cheddar slices, then spoon the blueberry mixture over the cheese. Top with the remaining cheddar slices. Cover with the other bread slice, cream cheese side down.

Lightly butter the outside of each sandwich.

Heat a non-stick skillet over medium heat. Grill sandwiches 3–4 minutes per side, until golden brown and cheese is melted, pressing gently with a spatula.
