  • 2 ½ cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon ground ginger

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground cloves

  • ¼ teaspoon salt

  • ¾ cup unsalted butter, softened

  • 1 cup packed brown sugar

  • 1 large egg

  • ¼ cup molasses

  • 1 teaspoon vanilla extract

  • ¼ cup granulated sugar (for rolling cookies)


Instructions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.

  • In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.

  • In a large bowl, beat softened butter and brown sugar until light and fluffy.

  • Beat in the egg, then add molasses and vanilla extract, mixing until smooth.

  • Gradually add dry ingredients to the wet mixture, stirring until just combined.

  • Scoop tablespoons of dough and roll into balls, then coat lightly in granulated sugar.

  • Place cookies 2 inches apart on prepared sheets. Bake for 10–12 minutes or until edges are set but centers are soft.

  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

  • Serve fresh or store in an airtight container for up to a week.

Notes

For extra flavor, lightly toast the spices before mixing. Chilling dough can produce thicker, chewier cookies. Adjust baking time for larger or smaller cookie sizes.
