 A creamy, crowd-pleasing corn dip that’s easy to prepare, endlessly scoopable, and perfect for gatherings of any size.
Ingredients
- Whole kernel corn, drained – 3 cups (450 g)
- Cream cheese, softened – 8 ounces (225 g)
- Sour cream – 1 cup (240 g)
- Mayonnaise – ½ cup (120 g)
- Shredded cheddar cheese – 1 cup (110 g)
- Shredded mozzarella cheese – 1 cup (110 g)
- Green onions, sliced – ½ cup (60 g)
- Red bell pepper, diced – ½ cup (75 g)
- Garlic powder – 1 teaspoon
- Onion powder – 1 teaspoon
- Smoked paprika – 1 teaspoon
- Salt – ¾ teaspoon
- Black pepper – ½ teaspoon
Instructions
- In a large bowl, mix cream cheese, sour cream, and mayonnaise until smooth.
- Fold in corn, green onions, and red bell pepper.
- Add seasonings and mix well.
- Stir in shredded cheeses.
- Serve chilled or bake at 375°F (190°C) for 20–25 minutes until bubbly.
- Garnish and serve with chips or vegetables.
Notes
This dip can be prepared a day ahead and baked just before serving. Adjust seasoning to taste and customize with additional vegetables or cheeses if desired.
