For the Rosemary Prime Rib:

  • 1 (5–6 lb) prime rib roast, bone-in or boneless

  • 4 cloves garlic, minced

  • 3 tablespoons fresh rosemary, finely chopped

  • 2 tablespoons fresh thyme, finely chopped

  • 1 tablespoon kosher salt

  • 1 teaspoon freshly ground black pepper

  • 2 tablespoons olive oil

  • 1 cup beef broth (for roasting pan)

For the Garlic Mashed Potatoes:

  • 3 lbs Yukon Gold potatoes, peeled and cut into chunks

  • 4 cloves garlic, peeled

  • 1 cup whole milk

  • 1/2 cup unsalted butter

  • 1/2 cup sour cream

  • Salt and pepper to taste

  • Fresh chives, chopped (for garnish)


Instructions

  • Preheat the oven to 450°F (230°C).

  • In a small bowl, combine garlic, rosemary, thyme, salt, pepper, and olive oil. Rub the mixture evenly over the prime rib.

  • Place the roast on a rack in a roasting pan and pour beef broth into the bottom of the pan.

  • Roast at 450°F for 20 minutes to form a crust.

  • Reduce oven temperature to 325°F (165°C) and continue roasting until internal temperature reaches desired doneness (120–125°F for rare, 130–135°F for medium-rare, 140–145°F for medium).

  • Remove roast from the oven, tent with foil, and rest for 20–30 minutes.

  • Slice roast against the grain and serve.

  • For mashed potatoes, place potatoes and garlic in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 15–20 minutes.

  • Drain potatoes and garlic, then mash until smooth.

  • Warm milk and butter together and gradually mix into the potatoes along with sour cream. Season with salt and pepper.

  • Garnish with chopped chives and serve alongside the prime rib.
