  • 1 pound ground turkey, cooked and crumbled

  • 3 cups frozen diced potatoes or frozen hash browns

  • 1 cup chopped onion

  • 1 cup chopped bell peppers (any color)

  • 8 large eggs

  • 1½ cups milk

  • 2 cups shredded cheddar cheese, divided

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon paprika

  • Salt and black pepper to taste

  • 2 tablespoons olive oil (for cooking)


Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  • Heat oil in a skillet over medium heat. Add onions and bell peppers; sauté until softened.

  • Add ground turkey to the skillet and continue cooking until warmed through.

  • Season with garlic powder, onion powder, paprika, salt, and black pepper. Remove from heat.

  • Spread frozen potatoes evenly in the bottom of the prepared baking dish.

  • Spoon the turkey mixture on top of the potatoes, spreading into a smooth layer.

  • Sprinkle 1 cup shredded cheddar cheese evenly over the turkey layer.

  • Whisk eggs and milk together in a large bowl, then pour evenly over the casserole.

  • Top with the remaining 1 cup cheddar cheese.

  • Bake uncovered for 45–55 minutes or until eggs are set and the top is golden and bubbly.

  • Let rest 10 minutes before slicing and serving.
