Ingredients

1½ cups long-grain white rice (300 g)

3 cups water or broth (720 ml)

½ teaspoon salt

1 tablespoon olive oil (15 ml)

1 pound ground beef (450 g)

1 small onion, diced (100 g)

3 cloves garlic, minced

2 tablespoons tomato paste (30 g)

1 teaspoon chili powder

1 teaspoon ground cumin

½ teaspoon paprika

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

½ cup water (120 ml)

1 cup shredded lettuce (40 g)

1 cup diced tomatoes (150 g)

1 cup corn, drained (165 g)

1 cup black beans, rinsed and drained (170 g)

1 cup shredded cheddar cheese (110 g)

½ cup sour cream (120 g)
Instructions

Cook rice with water or broth and salt until tender; fluff and set aside.

Brown ground beef in olive oil, then add onion and garlic.

Stir in tomato paste, spices, and water; simmer until thickened.

Divide rice into bowls and top with taco meat.

Add lettuce, tomatoes, corn, beans, cheese, and sour cream.
