Ingredients
- Unsalted butter – 2 tablespoons
- All-purpose flour – 2 tablespoons
- Non-alcoholic malty brew – 1 cup
- Whole milk – 1 cup
- Sharp cheddar cheese, freshly grated – 2 cups (8 oz / 225 g)
- Mild cheddar or Monterey Jack, freshly grated – 1 cup (4 oz / 115 g)
- Cream cheese, softened – 4 oz (115 g)
- Garlic powder – 1 teaspoon
- Onion powder – 1 teaspoon
- Smoked paprika – ½ teaspoon
- Dijon-style mustard – 1 teaspoon
- Salt – ½ teaspoon
- Black pepper – ¼ teaspoon
Instructions
- Melt butter in a saucepan over medium heat and whisk in flour.
- Slowly add the malty brew and milk, whisking until slightly thickened.
- Reduce heat and stir in cream cheese until smooth.
- Gradually add shredded cheeses, stirring until melted.
- Season with spices and mustard, adjusting to taste.
- Serve warm.
Notes
Keep heat low while melting cheese to maintain a smooth texture. Add a splash of milk when reheating if the dip becomes too thick.
