Ingredients

  • Unsalted butter – 2 tablespoons
  • All-purpose flour – 2 tablespoons
  • Non-alcoholic malty brew – 1 cup
  • Whole milk – 1 cup
  • Sharp cheddar cheese, freshly grated – 2 cups (8 oz / 225 g)
  • Mild cheddar or Monterey Jack, freshly grated – 1 cup (4 oz / 115 g)
  • Cream cheese, softened – 4 oz (115 g)
  • Garlic powder – 1 teaspoon
  • Onion powder – 1 teaspoon
  • Smoked paprika – ½ teaspoon
  • Dijon-style mustard – 1 teaspoon
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon

Instructions

  1. Melt butter in a saucepan over medium heat and whisk in flour.
  2. Slowly add the malty brew and milk, whisking until slightly thickened.
  3. Reduce heat and stir in cream cheese until smooth.
  4. Gradually add shredded cheeses, stirring until melted.
  5. Season with spices and mustard, adjusting to taste.
  6. Serve warm.

Notes

Keep heat low while melting cheese to maintain a smooth texture. Add a splash of milk when reheating if the dip becomes too thick.
