A delicious, bite-sized twist on classic quesadillas filled with seasoned chicken and melted cheese, perfect for snacks, parties, or quick meals.
Ingredients
2 cups cooked chicken breast, shredded
1 ½ cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 tablespoon olive oil
1 small onion, finely diced
1 bell pepper, finely diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon black pepper
½ teaspoon salt
8 small flour tortillas
2 tablespoons butter
Instructions
Heat olive oil in a pan over medium heat. Cook onion and bell pepper until softened.
Add garlic and cook for 1 minute.
Stir in shredded chicken, cumin, paprika, salt, and pepper. Cook for 3–4 minutes.
Place cheese and chicken mixture onto tortillas and fold in half.
Cook in a buttered skillet until golden and crispy on both sides.
Slice into small bite-sized pieces and serve warm.
Notes
Use freshly shredded cheese for best results. Adjust spices to taste. Serve with dips like salsa or guacamole for extra flavor.
