A creamy, flavorful pasta salad inspired by classic street corn, perfect for gatherings or quick meals.
Ingredients
300 g (10 oz) short pasta
3 cups (450 g) corn kernels
1 tablespoon olive oil (15 ml)
1 teaspoon chili powder (5 g)
½ teaspoon smoked paprika (2.5 g)
½ teaspoon salt (2.5 g)
¼ teaspoon black pepper (1 g)
½ cup (120 g) mayonnaise
½ cup (120 g) yogurt
2 tablespoons lime juice (30 ml)
1 teaspoon garlic powder (5 g)
½ teaspoon cumin (2.5 g)
1 cup (120 g) shredded cheese
¼ cup (15 g) cilantro
2 green onions
1 small red onion (100 g)
Instructions
Cook pasta until al dente, drain, and cool.
Heat oil and cook corn until charred, then season.
Mix mayonnaise, yogurt, lime juice, garlic powder, and cumin.
Combine pasta, corn, cheese, and vegetables.
Toss with dressing until well coated.
Chill for 30 minutes before serving.
