A refreshing mix of vibrant tropical fruits tossed in a creamy coconut dressing, perfect for any occasion.


Ingredients

2 cups (300g) fresh pineapple, diced

2 cups (300g) mango, diced

1 ½ cups (225g) papaya, diced

1 cup (150g) strawberries, sliced

1 cup (150g) kiwi, sliced

1 cup (150g) grapes, halved

1 banana, sliced (120g)

½ cup (75g) pomegranate seeds

1 cup (240ml) coconut milk

2 tablespoons (30ml) honey or maple syrup

1 tablespoon (15ml) lime juice

1 teaspoon (5ml) vanilla extract

1 tablespoon (10g) shredded coconut


Instructions

2 cups (300g) fresh pineapple, diced

2 cups (300g) mango, diced

1 ½ cups (225g) papaya, diced

1 cup (150g) strawberries, sliced

1 cup (150g) kiwi, sliced

1 cup (150g) grapes, halved

1 banana, sliced (120g)

½ cup (75g) pomegranate seeds

1 cup (240ml) coconut milk

2 tablespoons (30ml) honey or maple syrup

1 tablespoon (15ml) lime juice

1 teaspoon (5ml) vanilla extract

1 tablespoon (10g) shredded coconut

Directions

Wash, peel, and chop all fruits into bite-sized pieces.

Combine all fruits in a large bowl.

In a separate bowl, whisk together coconut milk, honey, lime juice, and vanilla extract.

Pour dressing over fruits and gently toss.

Chill for 20–30 minutes before serving.

Garnish with shredded coconut and serve fresh.

Notes

Add banana just before serving to prevent browning

Use full-fat coconut milk for a richer texture

Adjust sweetness based on fruit ripeness

Best served fresh for optimal flavor
