A refreshing and vibrant salad combining juicy watermelon, crisp cucumber, creamy feta, and fresh mint, perfect for warm days.
Ingredients
4 cups watermelon, cubed (600 grams)
2 cups cucumber, sliced (300 grams)
1/2 cup feta cheese, crumbled (75 grams)
1/4 cup fresh mint, chopped (10 grams)
2 tablespoons olive oil (30 ml)
1 tablespoon lime juice (15 ml)
1 teaspoon honey (5 ml)
1/4 teaspoon salt (1.5 grams)
1/4 teaspoon black pepper (1.5 grams)
Instructions
Cut watermelon into cubes and slice cucumber.
In a small bowl, whisk olive oil, lime juice, honey, salt, and pepper.
Combine watermelon and cucumber in a large bowl.
Pour dressing over and toss gently.
Add feta and mint, mix lightly.
Chill for 15–20 minutes before serving.
Notes
Use fresh mint for best flavor
Add feta just before serving
Best enjoyed the same day
